Cook Smart, Eat Smart
With fast-paced lifestyles and limited amenities, college students tend to eat packaged and processed foods due to their easy accessibility. In addition, many students are living on their own for the ﬁrst time and they lack basic cooking skills to expand their options. Looking to change this trend are two graduate students at North Carolina State University in Raleigh who are starting the Cook Smart, Eat Smart program this September. By teaching simple cooking techniques and healthy food options, Kristen Baughman and Sarah Beitzel hope to teach students how to cook in any living situation. The Cook Smart, Eat Smart program is a part of the North Carolina Eat Smart, Move More community initiative, but the two women have decided to alter the curriculum for college students. The eight-week program will feature different cooking techniques, such as slow cooking, steaming, and indoor grilling, and it will include tips on how to read nutrition labels and how to limit portions. Students will also take tours of a campus dining hall and a convenience store to learn how to choose healthier meal options. Even students with meal plans will be taught how to combine items from the dining halls with regular grocery items. To assist with the program, university dining at North Carolina State has donated the use of their cooking facilities and $500. As a result, the cost for students is $5 per session which includes a recipe booklet. Baughman encourages students to take advantage of any available appliance, such as a personal microwave, or any available resource, such as a community kitchen. Instead of popping popcorn and baking sweets, small appliances can be used to provide a quick breakfast or entire dinner. “You can use the kitchen to make healthy food too; you don’t always have to make cookies.” she says. Baughman continues saying, “At least 40 people have already signed up for the program, and we can only take 14 because of the size of the kitchen.” If the ﬁrst class is a success, Baughman anticipates teaching another session with a larger enrollment capacity. —Kristen Lott
