Whisk together ricotta, lemon peel, salt and pepper in a large bowl. 2. Preheat oven to 350 degrees. 3. arrange baguette slices on baking sheet; brush lightly with olive oil. 4. Bake until golden, 10–12 minutes; let cool and top with 1 tbsp. ricotta spread. Spoon 1 tbsp. on each crostini. drizzle with extra-virgin olive oil and sprinkle with grated orange peel. Snow peas: in a bowl, toss together 2 c. halved and slivered snow peas and 3 tbsp. rice vinegar. Spoon 1 tbsp. drained mixture on each crostini. Sprinkle with coarse sea salt and chopped toasted pecans. apricots: use sharp knife to finely chop 4 pitted ripe apricots. Spoon 1 tbsp. fruit on each crostini. drizzle with honey; sprinkle with finely chopped fresh mint. PreParatioN 1. Combine first 3 ingredients in a medium bowl; let stand 1–2 hours at room temperature, stirring occasionally. 2. Place shortbread cookies on individual serving plates. remove ice cream from cups (or scoop from container) and place on cookies. Spoon strawberry mixture over ice cream. garnish, if desired.
