Grain-based Foods (excluding buns) had unit sales of 514 million, up 1.9%. Bimbo Bakeries USA, the first major player in the category and still the leader, saw a 12% decline in unit sales in the year ended Aug. 7, at 91.8 million units. Sara Lee also experienced a decline, down 14%, at 20.7 million units. Gainers during the 52-week period included Kings Hawaiian, up 16% (58.5 million units); Pepperidge Farm, up 9% (27.5 million) and Flowers Foods, up 11% (30.7 million). Hostess Brands sales were up 28% (14 million units). Pepperidge Farm, Norwalk, Conn., which already had been in the thins market with its Deli Flats line, gave the segment a shot of energy with the introduction of Goldfish Sandwich bread. The Goldfish brand has been a principal driver of growth for Pepperidge, and the introduction represents the initial migration of the familiar fish into the bread category. First introduced in test markets earlier in 2011, the Goldfish bread was rolled out nationally in July. In addition to the thins market, whole wheat continued to be viewed as holding rich potential for growth. Beyond what he called “hard core” whole grain buyers, Mr. Dryfhout identified other segments with dramatically different views of whole grains. As measured by whole wheat flour shipments, Mr. Dryfhout appears correct in suggesting the growth for whole grains has not yet fully played out. In the year ended June 30, U.S. whole wheat flour production was up 7% from the year before. While the growth lagged the 14% growth in 2009-10, it was more impressive than the 3% gains in 2007-08 and 2008-09. Amid the difficult conditions in the bread market, major change is well under way in the roster of leading U.S. baking companies. Most dramatic over the past year was the announcement in November 2010 that Grupo Bimbo S.A.B. de C.V., Mexico City, already the largest baking company in the United States, was planning to acquire the North American Fresh Baking business of Sara Lee Corp. Just ahead of closing, neither Bimbo nor Sara Lee was achieving strong results. B.B.U. unit sales were 431,360,000 in the year ended Aug. 7, down 7% from the same period in 200910. The company B.B.U. is poised to buy, Sara Lee North American Fresh Bakery, the third largest U.S. bread baker, also struggled. At 244,189,300 units, sales were down 6% from the year before.
