The Subway restaurant chain added bread fortified with calcium and vitamin D to its menu. Each 6-inch serving of bread in the chain’s restaurants now provides 30% of the daily recommended value of calcium and 20% of the daily recommended value of vitamin D. Subway ranked as the most popular megachain in the annual National Fast Food Restaurant Survey released Sept. 6 by Zagat. The survey covered 103 chains that were voted on by 6,064 diners. The survey divided the chains into four categories: large chains (up to 5,000 U.S. outlets), mega chains (more than 5,000), quick-refreshment (focusing on beverages, ice cream, etc.) and full-service. Other most popular chains were Five Guys (large chains) and Starbucks (quick refreshment). “For better or worse, fast food is a major part of American culture, with our average surveyor eating at chain restaurants nearly 11 times per month,” said Tim Zagat, chief executive officer of Zagat Survey, New York. “It’s worth noting that a majority of surveyors are taking their health seriously and are demanding transparency from the industry. It’s also encouraging to see chain restaurants stepping up and offering healthier options.” In more nutrition news, Darden Restaurants, Orlando, Fla., said it will work toward a 10% reduction of calories over five years and a 20% reduction over 10 years. The chain plans to reduce sodium in its products by 10% over the next five years and 20% over the next 10 years. Jan Fields, president of McDonald’s USA, in July announced the company’s commitment to offer improved nutrition choices. The company now includes produce or a low-fat dairy option in every Happy Meal. McDonald’s, Oak Brook, Ill., by 2020 plans to reduce added sugars, saturated fat and calories through varied portion sizes, reformulations and innovations. McDonald’s by 2015 plans to reduce sodium an average of 15% overall across its national menu of choices. McDonald’s and competitor Yum! Brands Inc., Louisville, Ky., both were achieving profits in 2011 despite the recession. McDonald’s registered net income of $2.6 billion, or $2.49 per share, for the six months ended June 30, which was a 13% gain from $2.3 billion, or $2.13 per share, in the same time period of the previous year. Yum! Brands, Inc. had net income of $580 million, or $1.20 per share, for the six months ended June 11, which was a 10% gain from $527 million, or $1.09 per share, in the same time period of the previous year. Yum! experienced international growth as it surpassed 4,000 restaurant units, including 3,378 KFC units, in China during the second quarter ended June 11. Samestore sales in China grew 18% in the quarter. A 28% second-quarter decline in U.S. profits offset international results. Higher commodity costs and a 4% decline in samestore sales drove the U.S. decline.
